  • The grapes destined for our Sant’Antimo Rosso are usually harvested between September 25 and October 10, depending on the degree of maturation achieved. There is a further wine cellar in the vineyard followed by a bunch of clusters. Fermentation and maceration are carried out in stainless steel tanks at controlled temperature for a period of about 12 days. The grain is immediately followed by the wood passage, which is stored in French oak barrels for at least 12 months.
